In December 2002 I walked into a restaurant and asked for a job as a Commis chef. The owner offered me the position and said something I will never forget.
‘You start tomorrow morning, go buy Kitchen Confidential, read it, see you at 7am’
I have since read kitchen confidential numerous times, recommended it to new chefs, had long chats after service about it and referenced my favourite chapters.
It was with shock and a sad heart to hear of the passing of Anthony Bourdain on Friday 8th June. His passion for the industry and the people in it inspired a generation of chefs and cooks. He was one of the greatest story tellers of our time and his opening pages of ‘Typhoid Mary’ are some of the best pieces of literature on being a chef I have ever read.
