Westcountry Farm Visit
On a lovely sunny Cornish day, of which we have had quite a few lately, myself and two senior members of the kitchen team took a trip into the farm lands of Mylor. We met up with Sam from Westcountry Fruit sales in a lush field just outside of Mylor bridge to explore Canara farms poly tunnels and Lizard leaf before reaching Pete at the top of the farm, our farmer and most localised of Greengrocers.
As Pete walked us through his playground of experimental new crops our minds wandered over the culinary possibilities of each variety, what the potential yield could be for the seasons menu and how we could best represent such an amazing hyper local product.
We returned to the kitchen loaded up with mixed beans and mustard leaf. The beans simply steamed with seaweed butter and the leaves delicately dressed in our bramble vinaigrette from last years bumper crop of blackberries.
